3 T extra firm silken tofu, mashed
1 cup vegetable oil
1 1/2 cups sugar
2 tsp vanilla
2 cups grated zucchini, with skin
3 cups flour
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
1 1/2 tsp cinnamon
dash nutmeg
dash ground cloves
1 cup raisins, optional

Mix together tofu, vegetable oil, sugar, vanilla and zucchini. Sift together flour, salt, baking soda, baking powder, cinnamon, nutmeg and cloves. Add flour mixture to wet mixture. Stir in raisins, if desired. Pour into two greased and floured 9X5 loaf pans. Bake at 350 for 50-60 minutes. Let cool 10 minutes before removing from pans.
