3 T extra firm silken tofu, mashed with a fork
1 stick (1/2 cup) margarine, softened
1 tsp vanilla
12 T sugar
1 1/4 cups flour
1 tsp baking powder
1/4 tsp salt

Directions:
Directions:
Cream margarine and sugar until fluffy. Add mashed tofu and vanilla; mix well. Sift flour, baking powder and salt into the mixture and mix thoroughly using an electric mixer. Add additional flour if dough feels too wet. Roll out dough and use cookie cutters OR make cookie dough balls and flatten onto parchment paper or an ungreased cookie sheet. Cookies will not rise much, so roll/flatten to desired thickness. Bake at 350º for approximately 10 minutes. Frost or eat plain.

The absence of eggs makes this cookie dough safe for sampling before baking! This, along with its flexibility (a little more or a little less of any ingredient will not affect the outcome), makes this an ideal recipe to make with young children.
