MARINADE:
3/4 cup cider vinegar
1/2 cup olive oil
1/2 to 1 cup sucanat (organic brown sugar)


CAVIAR:
1 cup finely chopped celery
1 cup finely chopped green pepper
1/2 cup finely chopped red pepper
1/2 cup finely chopped yellow pepper
14 oz can black beans, drained and rinsed
14 oz can pinto or kidney beans, drained and rinsed
14 oz can white corn, drained
1/2 cup chopped onion
1 can black olives, chopped
tortilla chips, greens, or cooked rice

Directions:
Directions:
In small saucepan, bring cider vinegar, olive oil and sucanat to a boil to dissolve sugar. Cool marinade and pour over mixed veggies; refrigerate for 2 hours. Drain marinade and serve with tortilla chips, on a bed of dark leafy greens for a salad or over rice.
