1/3 c. olive oil
2 cloves garlic, chopped
Grated rind, juice of lemon
2 T. red wine vinegar
1 tsp. dried oregano
1 tsp. salt
1/4 tsp. black pepper
2 lbs. boneless sirloin, cut into 2-inch pieces
2 green peppers, cut into 1-inch pieces
2 red onions, cut into wedges
1 pkg. white mushrooms
2 boxes (6.9 oz. each) rice pilaf mix, prepared

Directions:

In small bowl, whisk oil, garlic, rind and juice, vinegar, oregano, salt and pepper. Pour half into large plastic bag; add beef. Seal; refrigerate 1-2 hours. Divide steak, peppers, onions and mushrooms into 6 equal portions. Put onto skewers. Heat broiler, place skewers on large broiler - pan rack. Brush with some of remaining marinade. Broil 5 minutes. Serve with rice
