2 eggs
2 T. milk
2 T. melted butter or oleo
2 T. flour
3/4 t. salt
1/8 t. pepper
1/4 small onion, sliced
2 c. peeled raw potatoes, diced (must use good flavored potatoes!)

Directions:
In blender, mix first seven ingredients and 1 c. potatoes for five seconds. Add remaining 1 c. potatoes; mix for eight seconds or until coarsely chopped. For each pancake, pour 1/4 c. mixture onto hot, well-greased griddle and spread into a four inch cake. Brown on first side, turn and brown on second side.
