1/2 c. (1 stick) softened butter or oleo
1 c. sugar
3 eggs
1 1/2 c. flour
dash salt
1/2 c. milk
2/3 c. flaked coconut
1 t. lemon extract
Directions:
Directions:
In large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each egg. Combine flour and salt, add alternately with milk to creamed mixture beating after each addition. Add remaining ingredients. Pour in greased bread pan. Bake at 325º for about 1 hour or until toothpick inserted in center comes out clean. Cool 10 minutes, remove from pan. Cool on wire rack. If using Baker's Secret bakeware, reduce oven temperature to 300º.
