1 can rotel with green chilies
2 cans cream of mushroom soup
2 cans cream of celery soup
2 cans water
1/4 c. chopped onion
1/4 c. chopped bell pepper
1/4 c. chopped celery
1 lb. peeled shrimp
1/2 tsp. curry powder
1/4 c. chopped green onion and fresh mushrooms
Cooked White Rice

Directions:
Directions:
Saute onion, bell pepper, celery in olive oil. Add soups and water. Simmer. Cut shrimp (if large) in thirds. Add to soup. Turn stove to level 3. Cook shrimp for about 5 minutes, max. Pour mixture individually over rice, then add chopped green onion and fresh mushrooms. Serve hot.

This is a Collins recipe. There is a J. Michael's restaurant in Panama City that supposedly, the owner & his wife got divorced and the wife published this restaurant recipe.
