1 small onion chopped
1/2 cup of celery chopped
1/2 cup chopped red bell pepper
1 jalapeno pepper finely diced
1 garlic clove minced
2 lbs of cooked ground Turkey breast or 4 cups of chopped turkey from Thanksgiving.
2 cans of cannellini or other white beans (drained and divided)
2 cans of fat free, low sodium chicken broth
1 small can of chopped green chiles such as Hatch
1 cup of frozen whole-kernel corn
1-1/2 teas of ground cumin
2 teas chili powder
salt and pepper to taste
1 cup of low fat milk
Chopped cilantro

In large deep pot, sautee onion, celery, peppers and garlic about 5 minutes in a little of ollive oil. Add cooked turkey 1 and 1/2 cans of beans, broth, chilies, corn, and seasonings and bring to a boil. Cover, reduce heat and simmer 15 minutes.

Mash remaining beans and add to milk then put in chili to help thicken. Simmer uncovered for 20 minutes. Stir in chopped cilantro.
