2 c. sugar
1 1/2 c. cooking oil
3 eggs
2 c. grated carrots
1 c. crushed pineapple
3 c. flour
1 tsp. salt
1 tsp. baking power
1 tsp. soda
2 tsp. cinnamon
1 c. chopped nuts
2 tsp vanilla

Frosting
1 8oz. package cream cheese
1/4 c. butter
2 tsp. vanilla
1 box powered sugar (sifted)

Directions:
Cream together sugar and cooking oil. Add eggs and beat well. Add grated carrots and pineapple. Sift together dry ingredients and add to the mixture. Add nuts and vanilla. Pour into greased 10 inch tube pan. Bake 1 hour 15 minutes at 350 for 50 minutes. Do not invert pan while cooling.

Frosting
Mix cream cheese and butter together until well blended. Add powdered sugar, vanilla and mix well. Spread on cooled cake.
