1 slice onion
1 cup brown sugar
2 cups vinegar
1 cup water
1 1/2 cups white sugar
1 tbsp. pickling spice
1 stick cinnamon

Directions:
Directions:
Wash and cook beets and remove skins. Boil beets with a slice of onion. Put beets in juice and simmer for 5 minutes or longer. Cool and then refrigerate.
