1/4 c. chopped onion
2 T. butter
1 c. rice
1 can chicken broth
1/4 tsp. thyme
salt
pepper
1/2 c. pecan pieces
2 T. butter
parsley

Directions:
Directions:
Saute onion in 2 T. butter until tender. Add rice, broth, thyme, salt and pepper. Bring to boil, reduce heat and simmer covered for 20 minutes or until moisture is absorbed.
Saute pecans in remaining 2 T. butter until browned.
Put rice in bowl and top with pecans and parsley.

I got this fabulous side dish recipe from Amy. It goes great with fish. A smile story: Amy and I decided to paint my parent's bedroom while we were in high school. I hear a screech and see Amy trying to scoop the gallon of spilled paint off the carpet and back into the can!
