2 lbs. Zucchini Squash
4 Eggs
1/2 c. Milk
1 lb. Monterey Jack Cheese, cubed
1 tsp. Salt
2 tsp. Baking Powder
3 tbsp. Flour
2 tbsp. Parsley, Chopped
1/4 c. Bell Pepper, Chopped or Green Chiles, Diced

Directions:

Steam Squash until tender but firm; dice and mix with remaining ingredients. Pour into greased casserole dish.
Bake at 325º 30 minutes.
