2 carrots, diced
2 stalks celery, sliced
1/2 c. onion, diced
4 Tbsp. butter or marg.
4 c. potatoes, diced
3 1/2 c. water
5-7chicken bouillon cubes
3 c. milk
4 Tbsp. flour or corn starch
Pepper to taste
1/4 lb. Velveeta
1 tsp dill weed (optional)
1 tsp. parsley (optional)

Directions:
Directions:
Saute in butter; carrots, celery & onion, till tender. Cook potatoes in water & bouillon cubes, till tender.
Make thickening with corn starch & water. Mix the sauted vegetables, potatoes & water, milk and Velveeta. Slowly stir in the thickening agent and stir till thickened--- use medium heat to keep from scorching and curdling. (If not as thick as you like make more thickening and add to soup or thicken with instant mashed potatoes)
