Sift into a bowl: (all ingredients at room temperature)
7/8 c. flour
1/2 t. salt
Make a well in the center, into which pour:
1/2 c. milk
1/2 c. water
Stir in the liquid. Beat until fluffy and add:
2 eggs

Continue to beat until large bubbles rise to the surface.

Have ready a 9.13 or muffin tin containing about 1/4 inch of (hot beef drippings, hot bacon grease, or melted butter). Pour in the batter. It should be about 1/2 inch high. Bake the pudding 20 minutes in a preheated 400 degree oven. Reduce heat to 350 and bake about 10-15 minutes longer. Serve immediately.

We put a little left-over bacon grease in each muffin tin and place the pan in the preheating oven to melt. Then we take it out and pour in the batter (or you can use a 9x13 pan). Serve with roast beef and gravy (lots of gravy!) We also spray the muffin tins with Pam before melting the bacon grease, so it doesn't stick.
