1 cup (8 oz) small curd cottage cheese
3 oz pkg gelatin flavor of your choice
15 oz can mandarin oranges, drained
20 oz can unsweetened crushed pineapple, drained
1/2 cup chopped pecans, optional
8 oz carton whipped topping, thawed

Directions:
Directions:
In a bowl, combine the cottage cheese and gelatin powder; mix well. Stir in mandarin oranges, pineapple and pecans if desired. Just before serving, fold in the whipped topping. 8 servings.

Nutritional information for one 3/4 cup serving (prepared with fat free cottage cheese, sugar free gelatin and light whipped topping, without pecans): 120 calories, 124 mg sodium, 2 mg cholesterol, 16 g carbohydrate, 5 g protein, 4 g fat.
Try with different flavors of gelatin and different fruits, but it tastes best if pineapple is always used.
