3 eggs
2 3/4 cups sugar
1 cup vegetable oil
3 tsp vanilla
2 cups grated zucchini with skin
3 cups flour
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
3 tsp cinnamon
1/2 cup chopped nuts

Directions:
Directions:
Beat eggs; add sugar gradually, then vegetable oil, vanilla and zucchini. Sift together flour, salt, baking soda, baking powder and cinnamon. Gradually add flour mixture to egg mixture. Stir in nuts. Bake in 2 greased and floured 9X5X3 loaf pans at 350º for 1 hour. Cool before removing from pans.
