1 head lettuce, torn
2 tomatoes, chopped
1 small onion, chopped
1 can pinto beans, drained and rinsed
1 bottle Western salad dressing
2 cups shredded taco cheese
Fritos or tortilla chips

Directions:
Directions:
Toss lettuce, tomato, onion and pinto beans. Immediately before serving, add taco cheese, dressing and tortilla chips. Serve chips on the side if salad will not be all eaten in one sitting.

This simple, refreshing salad is a much beloved potluck staple that we could always count on Marlene to bring. After she and Bob moved away, we had to make it for ourselves!
