2 cups flour
1 1/2 cups sugar
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
2 tsp baking soda
3 eggs
1 tsp vanilla
1/2 cup margarine or butter
1/3 cup vegetable oil
2 cups peeled, chopped mangos (approx 2 mangos, ripe but still firm)
1 cup raisins
1/2 cup chopped nuts

Grease two 9X5X3 loaf pans. Sift flour, sugar, baking powder, salt, cinnamon and baking soda together in a bowl. Beat together eggs, vanilla, margarine and vegetable oil. Add to dry ingredients. Stir in mango, raisins and nuts. Pour into loaf pans. Leave batter in the pans for 20 minutes before baking. Bake at 350º for 40-50 minutes, until toothpick inserted in center comes out clean. Cool before removing from pans.
