3/4 cup butter, softened
1/4 cup granulated sugar
2 large egg yolks
1/2 tsp pure vanilla extract
1/4 tsp kosher salt
2 cups flour



GLAZE:
1 cup powdered sugar
2 T fresh lemon juice
1 tsp grated lemon zest

Directions:
COOKIES: with mixer or by hand, beat butter and granulated sugar until fluffy. Add egg yolks, vanilla and salt and beat to combine. Gradually add the flour just until mixed. Divide the dough in half and shape into 1 1/4" diameter logs. Wrap in wax paper and refrigerate until firm, about 30 min. Heat oven to 350 º. Slice the logs into 3/8" thick pieces and space them 1" apart on lightly greased baking sheets (or use parchment paper). Bake until lightly golden, 15-18 minutes. Let cool on baking sheet 5 minutes, then transfer to wire racks to cool completely.

GLAZE: in small bowl, whisk powdered sugar, lemon juice and zest until it forms a thick but pourable glaze (add more lemon juice if necessary). Dip the top of each cookie into the glaze and let set about 15 minutes. Makes about 48 cookies.

The dough may be frozen. To bake, follow the instructions, cutting and baking the dough from frozen, using the upper end of the time range.
