2 T butter
2 stalks celery, chopped
3 medium carrots, sliced thin
3 pounds uncooked chicken breast
1 cup uncooked rice
1 pkg dry onion soup mix (I use half)
2 cups water or chicken broth
salt and pepper to taste
sprinkling of parsley

Directions:
Directions:
Preheat oven to 350.

Sauté celery and carrots in butter on medium to medium low heat in a medium-sized skillet for 5 minutes or until tender.

Mix dry rice and onion soup mix in bowl.

Spread rice in bottom on a 9 x 13 baking dish that has been sprayed with non-stick cooking spray.

Arrange chicken pieces on top of rice mixture. Place sautéed vegetables over chicken.

Salt and Pepper to taste. Sprinkle parsley on top.

Pour water over all and cover with a lid or aluminum foil.

Bake for 1 hour at 350º
