1 lb. ground turkey
1 1/12 lb. ground beef
1 c. fresh herbs, chopped
1 c. onion, chopped
1/2 c. celery, finely chopped
1/2 c. bell pepper, chopped
1 4-oz. can mushrooms, drained
1 egg
1 5-oz. can evaporated milk
1 T. Worcestershire sauce
1 tsp. hot sauce
1 tsp. seasoning salt
1/4 tsp. black pepper
1/4 tsp. celery salt
1 c. saltine crackers, crumbled

Use a combination of fresh herbs such as parsley, thyme, oregano, basil and cilantro. Chop up finely, removing any large stem pieces. Total amount of herbs should be about one cup. Combine herbs and all nonmeat ingredients in a large mixing bowl. Mix well. Add meat and use your hands to mix all together. Spray two loaf pans with vegetable spray and fill with meat loaf mixture. Bake in 350 oven for one hour. Pour off liquid from loaf pans periodically (save to make gravy).
