4 lbs. potatoes (about 10-12 medium size)
1 8oz. cream cheese (softened)
1 cup sour cream
2 tsp. salt
1/8 tsp. pepper
1/4 cup chopped chives (optional)
1/2 tsp. paprika
1 T. butter

Directions:
Directions:
Cook peeled & cubed potatoes in boiling water until tender. Drain. Preheat oven to 350º. Mash potatoes in large bowl with electric mixer. Add cream cheese, sour cream, salt, and pepper. Mix until smooth and light. (Might want to add a little milk and butter to make it mashed potato consistency). Stir in chives. Spoon into a greased baking dish. Sprinkle with paprika and dot with butter. Bake 30 minutes or until lightly golden and heated through.
