2 (15 oz each) cans Garbanzo beans, drained and rinsed
1 c. thinly sliced celery
1 red bell pepper, chopped
2 small zucchini, halved lengthwise and thinly sliced
1/4 c. chopped fresh parsley
1 tsp. paprika, or to taste
1 tsp. ground cumin
1 /8 tsp. ground red pepper
3 tbsp. red wine vinegar
3 tbsp. olive or veg. oil
1 large clove garlic, minced
1 small red onion, diced (opt.)

Directions:
Directions:
Combine all vegetables in a large bowl. Mix together seasonings, oil, vinegar and garlic in a small bowl. Blend together until well mixed and pour over vegetables, tossing until well mixed. Cover and chill before serving.
