1 cup butter
8 oz cream cheese, softened
3 1/2 cups flour
2 cups sugar
1 egg
1 tsp baking powder
1 tsp vanilla


ICING:
1 1/2 cups Crisco
1 tsp butter flavoring
1 T vanilla
1/4 tsp almond flavoring
2 lb pkg powdered sugar
1/4 to 1/2 cup water

COOKIES: mix butter, cream cheese and sugar with mixer until fluffy. Add egg, baking powder and vanilla; mix just until blended. Gradually add flour. Shape into 1 large or 2 small disks and wrap in plastic wrap. Chill dough 2 hours before use. Cut out and bake cookies at 325º for 10-12 minutes or until the bottom side of cookies start to brown. (I normally take cookies out while they are still soft on top--this seems to make cookies softer once cooled.)

FROSTING: mix Crisco with mixer until fluffy. Add butter butter flavoring, almond flavoring and vanilla. Add 1/4 cup water and 1/2 of powdered sugar. Mix until powdered sugar is incorporated. Add remaining powdered sugar gradually. Add additional water to make frosting consistency to your liking.

Almond flavoring is part of the basic frosting recipe I originally learned. However, over the last couple years I have experimented with a few other flavorings. You can usually find flavors like raspberry in the spice aisle of the grocery store, or I use candy flavorings (found at a cake decorating store). If you substitute candy flavoring, only use 2 drops in the frosting since they are extremely concentrated. These cookies get rave reviews every time I make them, and they stay moist for weeks in an airtight container. Have fun!
