1 1/2 c. Sugar
7 T. Cornstarch
1 1/2 c. water
dash of salt
3 Eggs yolks
1 t. grated lemon zest
2 T. Butter
1 Baked deep dish pastry shell

Meringue
3 Egg whites
1 t. lemon juice
6 T. Sugar

Directions:
Directions:
Combine sugar, cornstarch, salt and water - bring to boil, stir constantly until thick for about 5 minutes. Remove from heat. Stir small amounts of hot mixture into egg yolks, then return to remaining hot mix in pan. Bring to a boil and cook 1 minute. Remove from heat. Add lemon zest and lemon juice . Add mixture into cooled baked pastry shell. Set aside.
Beat Egg whites and lemon juice to soft peaks. Gradually add sugar and beat until stiff peaks form and sugar is dissolved. Spread over filling. Bake at 350 for 12-15 minutes or until top is golden brown. Cool thoroughly before serving. Enjoy!
