4 6 oz. salmon fillets
3 T. oil

Seasoning Mixture:
1/4 c. sugar
Dash cinnamon
1 tsp. cocoa
1 T. ground cumin
1-1/2 T. coarse salt
1 tsp. dry mustard
1 T. paprika
1/4 c. chili powder
2 tsp. ground pepper

Chinese Mustard Sauce:
1/4 c. dry mustard
2 T. hot water
1/4 c. sugar

Heat grill on medium-high heat.

Combine the seasonings listed above. Dip the salmon in the oil and tap off excess. Then coat fillets with spice mixture on both sides and around the edges. Pat the spice mixture in place; you'll have enough left over for another time. You can make the fish mild or with some heat depending on how thickly you coat the fillets.

To make the Chinese Mustard Sauce, combine dry mustard, sugar and hot water. Mix well, and pass the sauce at the table.

Grill the salmon until it just begins to flake, about 4 minutes a side for 1" fillets, or until it's done as desired.
