1 Loaf White Sandwich Bread
1 Stick Butter, Melted
1 c. Celery, chopped
1 c. Onion, chopped
1/2 c. Fresh Parsley, chopped
2 Eggs
3-4 c. Broth [Chicken or Turkey]
2 tsp. Poultry Seasoning
2 tsp. Salt
1 tsp. Pepper
1 tsp. Paprika

Cut bread into cubes with bread knife. Put in large pan. Melt butter. Add chopped onions and celery to butter and saute in skillet until mixture is slightly soft. [Do not over cook at this point] Set aside. Chop parsley and add to bread. Whisk together eggs, salt, pepper, poultry seasoning, and paprika. Add butter mixture and egg mixture to bread and stir. Pour in broth 1 c. at a time until mixture resembles thick cake batter. Taste to insure you have the correct amount of salt. Pour mixture into greased 9" x 12" pan. Sprinkle top with Paprika. Bake: 400º F. Time: 45 Minutes

You can use boxed chicken broth or you can make your own. Prior to starting the dressing: Put gizzard, heart, liver, etc.[the giblets] from turkey into sauce pan. Add 2 c. water, 2 stalks of celery including leaves, 1 carrot, and 1/2 small onion quartered. Add 1 tsp. salt and 1/2 tsp. pepper. Bring to boil and then simmer about 1 hour. Strain mixture through sieve and cool broth before using. I give the giblets mixture to the dog but some people like to use it in gravy. If you use it in gravy, don't invite me.
