1/2 c. chopped onion (can use frozen)
1 T. olive oil
1-1/2 c. cooked, chopped chicken (or two 5-oz. cans chicken)
1/2 c. chicken broth
2 15-oz. cans cannellini beans (do not drain)
1/2 t. celery salt
1-1/2 t. oregano
1/2 c. Newman's Own All Natural Bandito Salsa (medium)
1-1/2 c. shredded mozzarella, divided

Directions:
Directions:
In a 2-qt. pot, saute onions in olive oil until translucent. Add chopped chicken, mixing thoroughly, then broth. Add beans, celery salt, oregano and Bandito Salsa. Simmer 10 minutes, stirring gently. Just before serving, stir in 1 c. mozzarella. Divide among five bowls and top with remaining mozzarella.
