1/2 pound ground beef
3/4 c. chopped onion
3/4 c. shredded carrots
3/4 c. diced \celery
1 tsp. basil
1 tsp. parsley flakes
4 T. butter
3 cups chicken broth
4 cups diced potatoes
8 oz. American cheese
1/4 cup flour
1 and 1/2 cup milk
3/4 tsp. salt and pepper
1/4 cup sour cream

In a 3 quart pan, brown beef--drain. Set aside. In same pan, saute onion, carrots, basil and parsley in butter. Add broth and potatoes and beef. Bring to boil. Reduce heat, cover and simmer for 10 minutes.
In small skillet, melt butter, add flour and cook/stir until bubbly. Add this to soup; bring to boil. Cook and stir for 2 minutes. Reduce heat, add cheese, milk, salt and pepper. Stir until cheese melts. Remove from heat. Add sour cream.
