1 cup butter
1 cup brown sugar
1 cup white sugar
1 tsp vanilla
1 egg
2 1/4 cup flour
1 tsp baking soda
1/2 tsp salt
2 cups sweetened coconut
1 1/2 cup roasted and salted cashews, chopped
2 cups white chocolate chips

Directions:
Directions:
Preheat oven to 350º.
Beat together butter, sugars, vanilla and egg until creamy.
Combine flour, soda and salt. Stir into butter mixture.
Stir in coconut, cashews and white chocolate chips.
Drop dough by tablespoons about 2 inches apart onto ungreased cookie sheets.
Bake 8-10 minutes or until edges are golden brown.
Cool 2 minutes; remove from cookie sheet to wire rack to cool completely.
