6 cups cooked rice
1 can coconut milk
1 can sweetened condensed milk
1 cup milk (whole milk works best)
1 tsp vanilla extract
1 tsp cinnamon
1/2 cup raisins, or more to taste
1/2 cup toasted coconut, or more to taste

Directions:

Put all ingredients into a large sauce pan. Cook on medium heat. Stir constantly until hot but do not boil. Thickens as it cools. Eat warm or cold. Top individual servings with toasted coconut.

This pudding is rich and creamy and has a mild coconut flavor. We love this pudding for dessert but it's also really good for breakfast.
