18 - 24 hard boiled eggs - shelled
1 onion - sliced (optional)
1 cup jalapeņo peppers - fresh or pickled (optional)
4 tbsp. pickling spices - tied in cheesecloth
3 cups white vinegar
1 cup sugar
1 tsp. salt
Ground Tumeric - turns it a nice yellow color
Ground red pepper - to taste (optional)

Directions:
Directions:
Layer eggs, spices, onion and peppers (optional) in 2 quart jar. Bring rest of ingredients to boil. Pour over eggs. Seal immediately. Ready in 3 or 4 days.

Scott takes these on all his hunting trips. His friends all wanted the recipe for Scotty's Eggs. Funny thing is - the only way Scott will eat a boiled egg is pickled - and he certainly can't peel them due to the smell!!
