1 9 inch pie crust, unbaked
1 1/2 cups shredded lowfat mozzarella cheese, divided
5 large roma tomatoes
1/2 cup fresh basil leaves
2 cloves garlic, minced
1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
1/8 tsp black pepper

Directions:
Preheat oven to 400º. Place pie crust in pie pan. Bake crust for 9 minutes. Reduce oven to 375º. Sprinkle 1/2 cup mozzarella on bottom of pie crust. Slice tomatoes and arrange fan-like on top of cheese on crust. In a blender, combine basil and garlic. Sprinkle over tomatoes. In a medium mixing bowl, combine mayonnaise, remaining 1 cup of mozzarella cheese, Parmesan cheese and black pepper. Spread evenly over tomato mixture. Bake 25 minutes until golden. Let cool. Serve slightly warm or at room temperature. 8 servings.
