Ingredients:  
1-15 ounce can of black beans,drained and rinsed
1-16 ounce can white/yellow shoe peg corn
1 tbsp. fresh lime juice (or to taste)
3 tbsp. olive oil
3/4 tsp. cumin (or to taste)
1/2 cup red onion, chopped
1/4 cup chopped fresh cilantro (or to taste)
1/2 tsp. salt
1 cup chopped tomato
chopped jalapeņo pepper (to taste)

Directions:
Directions:
Combine everything except tomatoes. Cover and refrigerate overnight. Add chopped tomatoes just before serving.

Good with white or blue corn chips
