Shrimp and Grits

2 c. water
1 c. milk
¾ c quick grits
4 oz. grated cheddar cheese
4 T. butter
1 c. chopped sweet onion
6 strips bacon
1 T. vegetable oil
4 cloves minced garlic
1 lb. shrimp, peeled, deveined
½ t. each salt and pepper
¼ t. Tabasco



Directions:
Directions:
Bring water and milk to a boil and add grits. Reduce heat to low and simmer for 5 min. Add cheese, butter and salt and pepper.
Fry bacon in a cast iron skillet and cool and crumble.
Leaving drippings in the skillet, add vegetable oil and sauté the onions and garlic 4-5 min. Add shrimp and cook 4 min. more.
Salt and pepper to taste and add Tabasco. Serve over grits and top with bacon.
