1-1/2 c. flour
3/4 c. sugar
1/4 c. baking cocoa
1 tsp. soda
1/2 tsp. salt
1 c. cold water
1/4 c. oil
1 tbsp. vinegar
1 tsp. vanilla

Directions:
Mix all dry ingredients together
Mix wet ingredients into the dry
Spread into an 8 in. ungreased square pan
Bake at 350F till cake springs back

This is a quick cake to make and you can mix it by hand in one bowl. It's moist and great by itself but is especially nice with canned cherries and whip cream. Note: this is also a great non-dairy cake!
