• 1/2 lb. butter (2 sticks), at room temperature
• 1/4 c. sun-dried tomatoes packed in oil (shake off excess oil)
• 2 small or medium garlic cloves, minced
• 1 tbsp. fresh thyme, coarsely chopped
• 1 tbsp. freshly squeezed lemon juice
• Freshly ground black pepper to taste
• Salt to taste

Mix the butter with an electric mixer until smooth and fluffy. Mince the sun-dried tomatoes or purée them in a mini food processor. Add tomatoes to the butter, with the garlic, thyme, lemon juice, pepper and salt. Mix until well combined.

This butter is great on meats, and incredible on crusty bread at room temp, or slightly broiled.

Store in the refrigerator in an airtight container until needed. (The butter also freezes well.) Bring to room temperature before using.
