2 tbsp. unflavored gelatin
½ c. cold water
½ c. sugar
Dash salt
2 c. hot crushed pineapple, including juice
1 ½ tbsp. lemon juice
2-3 oz. softened cream cheese
1 c. heavy cream, whipped
1 baked pastry shell

Directions:
Directions:
Soften gelatin in cold water 5 minutes. Add sugar and salt and dissolve in boiling pineapple. Cool slightly and add lemon juice. Continue cooling. When filling begins to thicken, beat until light and foamy. Fold in softened cream cheese and then whipped cream. Pile into pastry shell and chill until firm.
