Stew meat
1/2 sweet onion
Dry basil
2 bay leaves
Olive oil
Baby golden potatoes
4 stalks of celery
4 carrots
1pkg sliced mushrooms
2 boxes chicken broth
1pkg dry onion soup mix
Cornstarch
1 bottle amber ale (I like Fat Tire)

Directions:
Directions:
Brown meat in olive oil with chopped onion in soup pot. Sprinkle with basil and add beer. Allow to simmer for 30 minutes. Add rest of ingredients except the cornstarch, simmer for 3 to 4 hours. Strain out veggies and meat, return broth to pot. Mix cup of broth with cornstarch, whisk, return back to broth to thicken and a strong simmer. Once thick, add meat and veggies back to pot, stir, and serve.
