2 bags of baby spinach
2 garlic cloves minced
1/2 small onion finely chopped
8 oz of Mexican shredded cheese
4 ounces of finely shredded cheddar cheese
1 can of mild Old Elpaso green enchilada sauce
8 corn tortillas
Chopped cilantro for garnish

Directions:
Directions:
Sautee garlic and onion in a little olive oil for one minute and add spinach. Cook another minute, just until wilted, and turn off heat.
Make sure spinach is drained (take out any excess water).

Place corn tortillas in damp paper towel and heat in microwave for 1 minute or until soft.

Add a small amount of green sauce to bottom of small square 8x8 baking dish.
In each tortilla, add a large tablespoon of spinach mixture and 1 ounce of Mexican blend cheese. Roll tortillas and place in dish.

Once tortillas are in dish, pour remainder of green sauce evenly over enchiladas. Add cheddar cheese on top. Bake at 375 uncovered 15 to 20 minutes.
Garnish with chopped cilantro.

Aunt Tracy likes to add some cooked chicken to each tortilla for a complete meal. You can also double this recipe to feed 8.
