1/4 c. butter
1/2 c. flour
2 eggs
1/2 c. milk
1 small apple sliced
Pinch of cinnamon

Directions:
Directions:
Preheat oven to 425 degrees. While preheating the oven, place a 9" pie pan in the oven, with the butter (to melt it).
Mix together the flour, eggs, milk, cinnamon with a fork in a bowl (batter will be lumpy--don't over-mix).
Place the apple slices in the pie pan over the melted butter; pour in flour mixture and place in oven. Bake for 20 minutes until golden brown and puffed. Sprinkle with powdered sugar and serve with your favorite syrup. Cut into quarters and serve!

Katie--this has been a favorite of my nieces and nephews for years. Auntie Robbin has always made this for them when they stayed overnight. They all call it Auntie Robbin's Puff Puff Pancake.
