1 rotisserie chicken - shredded
3 T extra virgin olive oil
1 large onion chopped
2-3 garlic cloves chopped
1 jalapeņo seeded and chopped
1 rounded T chili powder
2 t. ground cumin
1 beer
16 oz. jar of green salsa
1 qt. chicken stock
4 handfuls tortilla chips-divided
1 handful cilantro leaves
Juice of 2 limes

Directions:
Directions:
Heat olive oil. Cook onions, garlic, and jalapeņos until soft. Add chili powder and cumin and cook 1 minute. Add green salsa, beer, and chicken stock. Bring to boil. Add chicken and simmer for 10-15 minutes. Add chopped cilantro leaves. Add 2 handfuls crushed tortilla chips to thicken the soup. Simmer 8-10 minutes more. Garnish with sour cream and remaining tortilla chips.
