4 tbsp. butter
1/2 c. minced onion
1 tbsp. flour
1/2 c. half & half
4 eggs
1/2 c. sour cream
4 oz. shredded cheddar cheese
4 oz. shredded swiss cheese
1 pie crust
1 tbsp. parsley (optional)
1/4 tsp. nutmeg (optional)
Suggested fillings: spinach, bacon, ham

Directions:
Directions:
Melt butter, add onion over medium heat. Add flour.
Stir in half and half. Cool.
Beat eggs and sour cream in large bowl. Add cooled mixture of half and half and onions.
Pour over cheddar and swiss cheese in pie crust.
I use Pillsbury pie crust from the dairy section, and prefer a large Pyrex pie plate.
Bake 350º for 1 hour

I like to double the recipe and make one spinach and one bacon. Great for brunch or anytime.
