1 large yellow onion diced
4 cloves garlic crushed
6lb 6oz can tomato filets, seeded and chopped
14 basil leaves chopped
2 sprigs Italian parsley
6 cups chicken stock
2 cups whipping cream
pinch black pepper
2 Tbs Sherry vinegar
Sea salt to taste
Pinch of cayenne pepper

Sweat onion and garlic to translucent in olive oil. Add tomato filets, basil, parsley, chicken stock, cream and pepper. Bring to a low simmer for 20 min. Puree in blender and strain through coarse strainer. Add vinegar, salt and cayenne. Garnish with garlic croutons.
