1 prepared pie shell, unbaked
1 egg white
1/4 lb. bacon, chopped into 1inch lengths
2 cups half and half, scalded and cooled slightly
3 eggs
1/4 tsp. salt
1/8 tsp. pepper
dash of nutmeg
6oz. cheddar cheese, grated
6 oz. Swiss cheese, grated
6 oz. muenster cheese, grated

Directions:
Preheat oven to 375º Brush prepared pie shell with egg white and prick shell with fork several times. Cook bacon until fat is almost rendered out, but bacon is not yet crisp. Drain on paper towel. Beat together scalded half and half, eggs, salt, pepper, and nutmeg. Sprinkle bacon on the bottom of pie shell, and mound the cheeses on top. Slowly pour the custard over it. Bake35-40 minutes or until the top is golden brown. Test center with toothpick to see if custard is set. Remove from oven, and let quiche set 10 minutes . Serve
