2/3 cup all-purpose flour
˝ cup granulated sugar
1 T cornstarch
3 egg whites
6 T butter, melted and cooled
˝ tsp. almond extract (can use vanilla)

Directions:
Directions:
Preheat oven to 350 F (180C). Generously coat baking sheet with cooking spray.
In a bowl, whisk together flour, sugar, cornstarch, egg whites, butter and almond extract.

Make two cookies at a time, drop batter by 2 heaping tablespoons onto baking sheet about 7”apart.
Using a small spatula or back of a teaspoon, spread batter into 5”rounds.
Bake 9-10 minutes until edges are just lightly browned.

Cover palm of hand with a folded kitchen towel , using a large spatula flip cookie into palm of hand.
Working quickly, place fortune in center of cookie and fold in half.
(* If cookies cool and become too firm to shape, pop them back into oven for a minute or two just until them soften again).
Immediately bend in corners of cookie to form fortune cookie shape.
Place in muffin pan cups to cool.

Immediately decorate as desired using melted chocolate, jimmy’s and sprinkles.
