1/2 c soy sauce
1 1/2Tbs dry sherry (optional)
½ c brown sugar
1 egg yolk
2 cloves garlic, minced
1 piece ginger – about 1 inch square, minced
2 lb boneless lean pork, chicken or beef, thinly sliced into 1 inch long pieces
10 T cornstarch, divided
3c plus 3 T vegetable oil – divided
1 can (20 oz) pineapple chunks in syrup
1/4c distilled white vinegar
1c water
1 large yellow onion, thinly sliced length wise
8 green onions, diagonally cut in 1 inch pieces
1 red bell pepper, thinly sliced length wise
1 green bell pepper, thinly sliced length wise
4 oz. fresh mushrooms, sliced
2 carrots, cut into match stick pieces
1 medium cucumber &/or similar sized zucchini, seeded and cut into ¼ inch wide pieces

For marinade, combine soy sauce, sherry, brown sugar, garlic, ginger and egg yolk in large bowl. Add chosen meat; mix to coat well. Cover and refrigerate 1 hour, stirring occasionally.

Drain meat, reserving marinade. Place 8 T of the cornstarch into a large bowl. Add meat pieces; toss to coat well. Heat enough oil in wok or large skillet to cover bottom generously over high heat. Add ½ of the meat pieces cooking until brown – about 5 minutes. Drain on paper towel. Repeat; cooking all meat; adding more oil as needed for frying.

Drain pineapple, reserving syrup. Combine the syrup, reserved soy sauce marinade and vinegar. Blend remaining 2 T cornstarch and water in another small bowl.

Heat remaining 3 T oil in wok over high heat. Add all vegetables and stir fry 3 minutes. Add pineapple syrup mixture; cook and stir until sauce boils and thickens. Add pork and pineapple; stir fry until heated through.
