1 lb beef, trimmed
4 T vegetable oil, divided
1/2c water
4 tsp cornstarch
4 tsp soy sauce
1 tsp sesame oil
1 tsp oyster sauce
1 tsp Chinese chili sauce
8 green onions, cut into 1 inch pieces
2 cloves garlic, minced
1 piece fresh ginger (about 1 inch square), pared and finely minced
2/3 c unsalted roasted cashews (about 3 oz)

Cut beef across the grain into thin slices about 2 inches long.
Heat 2 T vegetable oil in a wok or large skillet over high heat.
Stir fry ½ of beef until brown, 3-5 minutes. Remove and set aside. Repeat with remaining beef.

Combine water, cornstarch, soy sauce, sesame oil, oyster sauce and chili sauce in small bowl; mix well.

Heat remaining oil in wok over high heat. Add onions, garlic, ginger and cashews. Stir fry 1 minute. Add meat and cornstarch mixture. Cook and stir until liquid boils and thickens.
