Chicken Enchiladas Recipe

1 can Cream of Chicken
8 oz. sour cream
1 c. salsa
2 tsp chili powder
2 c. chicken, cooked & diced
1/2 c. sautéed onions
1 c. shredded monterey jack cheese
10 flour tortillas
green onions
black or green olives
tomatoes
green chilies

Directions:
Directions:
Mix first 4 ingredients together.

If desired, add a little hot sauce to this mixture.

Mix chicken, onions, and cheese with 1 c. of the above mixture.

Spread 1/4 c. of the chicken mixture down the center of each tortilla and roll up.

Place in a 3 qt. baking dish.

Pour remaining salsa mixture over the top.

Cover.

Bake for 30 min. @ 350º, then uncover and bake another 10 minutes until golden.

Top with tomatoes, olives, onions and chilies.
