1 large yellow onion, diced
1/2 to 1 bunch of celery, diced
1/2 bunch parsley, chopped
1 hot green pepper, sliced
1-2 carrots, thinly sliced
2 (16 oz) cans stewed tomatoes
3 (8 oz) cans tomato sauce.

For each person:
2 prawns;
3 littleneck clams;
1/2 crab, cooked and cracked

32 oz water
1 T Italian seasoning
salt and pepper to taste
1 1/2 (or less) T chili powder
1 C white wine (Chenin Blanc--doesn't include wine for the cook)
1 lb red snapper;
2 T olive oil

Directions:
Directions:
Saute onion, celery, parsley, green pepper, and carrot, preferably in olive oil.
Add tomatoes, tomato sauce, water, Italian seasoning, salt, pepper, chili powder.
Bring to a boil and simmer at least 2 hours.
(It can be refrigerated, at this point, if desired.)

Add wine, cleaned clams, and cook until clams start to open.
Add snapper, prawns, and cook for 10 minutes.
Serve with cracked crabs and garlic bread.

This is a great party meal, as long as the guests like seafood! I've actually cooked this several times and its a hit, each time.
